La Büsecca
INGREDIENTS
- Butter 30 g
- Bacon 50 g
- Carrot
- Onion
- Celery
- Sage
- Mixed tripe 1000 g
- Vegetable broth 2500 ml
- White beans 300 g
- Parmesan cheese 50 g
- Salt
- Pepper
INSTRUCTIONS
Cut the tripe in small pieces and boil it for half an hour. Chop the bacon and fry it in a large pan. Add the butter, vegetables and the aromas. Fry it all for 15 minutes and then add the tripe and the water. Cook it at low heat for at least 2 hours and the sprinkle it with parmesan cheese.
