Anguìla in ümid
INGREDIENTS
- Eel
- Onion
- Carrot
- Celery n. 1
- Red wine n. 1 glass
- Tomato sauce
- White flour
- Butter
- Salt
- Pepper
INSTRUCTIONS
Chop the eel in pieces of 4 cm in height. Flour the eel pieces and fry them in a buttered pan. Then add the chopped vegetables, red wine and tomato sauce. Let it cook for a while and then add salt, pepper and the eel. Cook it for 40 minutes with the lid and then serve it with polenta.
